One of the classic British slow cooked dishes, lamb shanks are really fantastic. Over recent years they have seen an incredible revival due to their tenderness and incredible flavour. If you allow for 3-4 hours cooking time you will be rewarded with fall of the bone meat, rich gravy and full flavoured shanks. Fore shanks are great for stock and broth making and are equally tasty but have a little less meat and are not so nice for presentation as the hind steaks.
