Nigel started curing bacons nearly 30years and it became a bit of an obsession like his haggis and black pudding making. Constantly trying different cures and brines till he found the one he felt worked best. But the key to good bacon is the pork! At McCaskie's we use only the very finest 100% Specially Selected Scottish Pork  which is then dry cured by hand and allowed 7 days then a further few days to air dry.

Our bacon cooks quickly and evenly with no bubbles of water or that white liquid you get with other bacons. McCaskie's Bacon simply the way it should be!
