We take the best centre cut fillet of Scotch Aberdeen Angus Beef and seal it at a very high heat. We then cool the beef. It is then placed on a bed of home made mushroom and brandy duxelle. Our homemade pate is spread generously on top and then its carefully wrapped in pastry, glazed with egg wash ready for the oven.
Our wellingtons contain a very generous 350g- 450g piece of fillet.
