Pork belly can also be sliced thinly and cooked on the BBQ.
Pork belly is a fattier cut and benefits from long slow cooking.
Pre-heat oven to 160C/GM4. Allow roast to come up to room temperature. Season to taste, place in a roasting tin and allow 40minutes per 500g plus an extra 30 minutes. Remove roast from oven and allow to settle for 15-20 minutes prior to carving.
