Our ham ribs are cured using out own cure for 3 days prior to hanging and allowing to air dry. The ribs are from our specially selected Scotch pork loin and bellies. Available smoked or unsmoked. They are the essential ingredient to make ham stock for soups e.g. Ham & Lentil. The smoked ribs are also delicious boiled to eat hot of the bone.
