This on the bone 100% Scotch Pork Shoulder of pork is ideal for a slow roast and pulled pork. Pork shoulder has a good level of natural fat to ensure the pork stays moist during low slow roasting. Pork shoulder has a brilliant flavour and can stand up to strong marinades and spices.
Description
Once in our shop this all went into sausages. Now it has found fame as the key ingredient for fantastic pulled pork. Best with skin on but if you do not wish this, please state in the comments and we will happily remove the skin. Slowly cooked in the oven or also great in the slow cooker, pork shoulder is now being enjoyed and is easy to cook – patience is key. Long & Slow = Easy & Delicious! Recommended 200g per person/serving.

Cooking Tips
Allow you meat to come up to room temperature, remove from vacuum pack and allow ten minutes to 'bloom' Pork will be a little wet pat dry and rub with plenty of sea salt. 1)Preheat you oven to 160C/GM3. Cover roast with foil and roast for 30 minute per 500g and then remove foil and blast at 210-230C/Gm6-8 for 20 minutes. This will ensure a nice crackling. 3) Allow to rest before carving. Pork juices should run just clear.
