Allow you meat to come up to room temperature, remove from vacuum pack and allow ten minutes to 'bloom' Pork will be a little wet pat dry with paper towel and rub with plenty of sea salt. 1) Preheat your oven to 210-230C/GM6-8. Place your uncovered joint in the oven and blast for 20 minutes if joint is 2Kg. 2) Reduce the temperature to 160C/GM3 and roast for the following times uncovered. 20-25 minutes per 500g. 3) Allow to rest before carving. Pork juices should run just clear.
