A lovely choice for a delicious roast. Our pork is from Stobbs farm in Hawick in the Scottish Borders aged for a minimum of 7 days to ensure tenderness. Really lovely pork. Serves 6. Fantastic Value!
Description
Pork loin is the equivalent of sirloin of beef and has very similar qualities. Lovely flavour and more tender than leg. Our Finest pork loin joint come with the skin and scored and rolled. It cooks quicker than leg and easy to carve. We leave the skin on as standard to produce lovely crackling. Available without skin if prefered

Cooking Tips
Allow you meat to come up to room temperature, remove from vacuum pack and allow ten minutes to 'bloom' Pork will be a little wet pat dry with paper towel and rub with plenty of sea salt. 1) Preheat your oven to 210-230C/GM6-8. Place your uncovered joint in the oven and blast for 20 minutes if joint is 2Kg. 2) Reduce the temperature to 160C/GM3 and roast for the following times uncovered. 20-25 minutes per 500g. 3) Allow to rest before carving. Pork juices should run just clear.
