Beef shin is from the fore or hind leg and is a very hard working muscle. It is for this reason that it tastes so good and is incredibly tender. It does however require long slow cooking to break the tight muscle fibres down. Suitable for home freezing.

Cooking Tips
Coat 1Kg piece/pieces in a little seasoned flour and brown in a casserole dish. Add some diced carrot and onion and soften. Add a tin of chopped tomatoes, 50g tomato puree and 500ml of red wine and 500ml water/stock. Stir and cover and place in the oven for 2-21/2 hours at 160C/GM3. Serve with mash potatoes or reduce sauce and serve with pasta
