The pork neck fillet is the centre of the pork shoulder sometimes known as a Boston Butt. This fantastic piece of Scotch pork is great for slow roasting , Excellent on the BBQ and must for meat smoking enthusiasts.
Description
Nicknamed the Boston Butt, this highly unrated cut from the should is simply fantastic. Cut into steaks are a great alternative to the loin, or as a piece is great for roasting. There is no external fat or skin making it easy to carve. I enjoy doing these on the BBQ smoker.
Suitable for freezing.
Cooking Tips
Pre-heat oven to 180C/GM4. Allow roast to come up to room temperature. Season to taste, place in a roasting tin and allow 20 minutes per 500g plus an extra 30 minutes. Remove roast from oven and allow to settle for 15-20 minutes prior to carving.
