Due to this maturing the outside may become dark or brownish – please don't be put off. This is the sign of an extra special tender and full of flavour fillet. Either roast as a piece, cut in to steaks or use as the key ingredient for Beef Wellington. You'll not get finer beef fillet than this. Suitable for freezing.

Cooking Tips
If roasting, brown fillet on all sides in a little oil. Preheat oven to 200C/GM 5 and roast for 15 minutes per 455g/1lb. Allow to rest covered with foil. If using for Beef Wellington, sear on all sides until fully browned. Allow to cool before wrapping in pastry.
