Lamb shoulder because of its various muscles does break down a little when carved and isn’t as nice visually on the plate as a slice of leg. However, lamb shoulder is so tasty and given a little longer in the oven at a lower temperature will reward you with an incredible roast of lamb. Its best served/cooked medium to well and is the most economical of the lamb roast options. Remember to use the left overs in a curry, hotpot or chopped up in a shepherds pie. Suitable for home freezing.
