Sourced from 27 hectares of vineyards selected for their south-easterly and south-westerly aspects, the soils possess a good concentration of stones within the Kimmeridgian clay typi- cal of Chablis, which helps drainage, reducing yields and increas- ing the quality of the grapes. After a light pressing, the juice is allowed to flow by gravity through the winery floor to the cellar. Fermentation is controlled in tank, where the wine ages for a year before bottling, and ages for a further year in bottle before re- lease.
The average age of the vines vary between 3 and 40 years, which are trained on single and double guyot training system. The soil type is limestone, which is typical of the area. The vineyards are not irrigated and both mechanical as well as manual harvesting methods are used.
This is benchmark Chablis, with crisp, citrus overtones and a min- eral finish. Bottled with screwcap to retain maximum freshness.
